Started with eight traditional botanicals, then add a hint of lavender, naturally grown here on their farm at Spring Creek. Subtly aromatic, distinctive.

DISTILLERY

ELLENSBURG DISTILLERY CRAFTS A TRULY ARTISANAL
spirit with a hands-on focus that begins in our lavender fields and ends when you taste our one-of-a-kind gin. The inspiration behind amethyst was a combination of our shared passions. We already loved lavender, and were known for the unique varieties we grow. Our experience designing and building specialty machinery would allow us to craft our own proprietary stills, designed specifically to bring out all the delicate nuances in our lavender gin. So we became the second craft distillery in the state of Washington and set to work. All the magic happens at the farm:
the lavender is grown, harvested, carefully dried and prepared by hand. We meticulously select the blend of botanicals that are vapor-distilled to exacting parameters of flavor, balance and aroma. We even bottle by hand, frequently with the help of our friends and neighbors, turning the whole event into a party with really good drinks. Now, Amethyst’s attention to detail and superior smoothness has caught the notice of key bartenders and mixologists across the country. People praise its subtle taste, easy blending, and meticulously handcrafted origin that raises the bar on what ‘artisanal’ really means

2 sugar snap peas
3/4 oz lavender simple syrup (or plain simple syrup)
1-1/2 oz Amethyst Lavender Gin
1/2 oz dry vermouth
3/4 oz lemon juice
Lavender Sprig and sugar snap garnish

Top up with your favorite Sparkling Wine!


"Amethyst Lemon -Basil Smash" - perfect for sipping in the garden!
1-1/2 oz Amethyst Lavender Gin
3/4 oz fresh lemon juice
1/2 oz simple syrup
2-3 Lemon Basil Leaves , to taste
More Lemon Basil, and Lemon Wheel for garnish

Gently muddle the Lemon Basil in a cocktail shaker.
Add the rest of the ingredients, and shake over ice.
Fine strain over fresh ice, garnish, enjoy!

1 part Amethyst Lavender Gin
3 parts Sparkling Apple Cider
Apple Slices for Garnish

Fill a rocks glass with ice.

Add Amethyst Lavender Gin.

Top with Sparkling Cider, Stir.

Garnish with Apple Slices.
