Formerly Kazuki Gin, “Beacon” embodies a sense of place, signifying two monumental sites on Vancouver Island where Sheringham Distillery originated–the iconic Sheringham Point Lighthouse beacon located by our first distillery and the beloved springtime cherry blossom-lined Beacon Hill Park. Brilliant floral and fruitiness of the cherry blossoms deliver polished and rounded edges with soft citrus notes of yuzu and grapefruit, and local green tea leaves and flowers give a delicate herbaceous note through to the finish. Beacon Gin is elegant on its own and brilliantly nuanced in a Sheringham cocktail.

Our mission is to create perfectly balanced spirits suited for every occasion, which is why you'll find that our award- winning spirits are equally elegant on their own or brilliantly nuanced in a cocktail.
Rooted in the West Coast
Our story began when two people, inspired by the land and one another, took the first steps to realize their vision: creating and sharing finely crafted spirits that evoke a strong sense of place and embodied bold culinary artistry. Starting from scratch, Jason and Alayne MacIsaac gradually built their first distillery above their garage at home in Shirley, B.C., a humble Southern
Vancouver Island town whose original name was Sheringham. With appreciation of fine culinary experiences, we select botanicals that are abundant and in season. From sustainably foraged kelp from the Pacific Ocean to cherry blossoms and yuzu peel, our ingredients are of the highest quality and play an integral role in the overall expression of each spirit.
We’re inspired by our spectacular setting. Nestled in the rugged island landscape we call home, our distillery pays tribute to our environment by selecting quality seasonal ingredients, thoughtfully crafting each spirit’s flavor profile, and championing sustainable practices. Alayne believes in sustainable business practices that prioritize quality while remaining true to our values of authenticity, innovation, and being chef-driven.

Jason MacIsaac
Jason believes that every chef has the same ingredients in their pantry, but the skill lies in how they balance each flavor to create a unique outcome. The skills needed to find harmony in high-quality ingredients in the kitchen are the same principles that apply to distilling exquisite spirits. With extensive experience in the culinary world, Jason uses culinary artistry and welcomes every opportunity to explore and refine his creativity and deepen his craft through distillation.

INGREDIENTS:

1 2/3 oz Sheringham Beacon (Kazuki) Gin
1/2 oz Rosé Wine (Sweet)
1/3 oz Dry Vermouth
1/3 oz Filtered Water
1 Dash Peychauds Bitters
METHOD:

Build all ingredients into mason jar, seal tight, store in freezer.
