Introducing The Wildlife Collection, a new limited-edition series of cask strength, single barrel whiskies that attempt to answer the question, “How does weather affect aging whiskey?” – namely the exceptionally high heat, ice storms, wild temperature swings, drought and low humidity levels that hit Texas Hill Country within the last year. The Milam & Greene Wildlife Collection pays homage to the local Texas wildlife that somehow thrive in these extremes. The first release of this collection was The Scorpion Single Barrel, which sold out in less than 15 minutes. The second release was The Bobcat Single Barrel which sold out in less than 3 minutes. More limited releases coming soon!
“We are continuously experimenting to determine how Texas weather affects aging whiskey – whether it was distilled in Texas or elsewhere – and the results are quite extraordinary so far,” says Milam & Greene Whiskey CEO and master blender Heather Greene. “We’ve noticed that the wild swings in high and low temperatures matched with low humidity here are a real ingredient in our whiskies. The Wildlife Collection, therefore, will deliver a traditional base flavor of a Kentucky or Tennessee whiskey but is tweaked and refined using the natural elements like wind, sun, and humidity of the Texas Hill Country to affect the aging in a barrel and to make something truly special.”

Milam & Greene was created by founder Marsha Milam, whiskey expert and Master Blender Heather Greene, and Kentucky veteran Master Distiller Marlene Holmes. Our charming distillery sits in the lush, Texas Hill Country where the hot summers, mild winters, and wild temperature variances add spark and personality to our spirit. To achieve excellence, we bring in grains, yeast, barrels and experience from all across America to create our award-winning whiskies. As well as multiple gold, double gold and platinum awards from credible spirits competitions and high marks from Wine Enthusiast, in 2021 Milam & Greene was awarded the “People’s Choice Award” at The Texas Whiskey Festival and “Best in Show” out of 550 entrants at The American Craft Spirits Association.

Excellent whiskey begins with the best ingredients, grains from Texas, Oregon, Wyoming and Washington unite to create robust aromatics and flavors.
We use our own proprietary yeast recipe to yield beautiful aromas.
We distill on a 300-gallon copper pot still in the heart of Texas Hill Country AND on classic column stills in Bardstown, Kentucky – each produces different notes and character.
We age and batch vintage whiskies from various states together with our own characterful distillate to create unique and gorgeous flavors.
We source bourbon barrel gems for our limited, sought after “Single Barrel” range.
We mature and finish in multiple barrel types in Blanco, where the unique Texas terroir enables us to play with timing and tastes.
We release coveted small batch “grain to glass” whiskey and yearly limited editions.
We blind proof, hand bottle, and label each whiskey with tremendous care and heart.
TASTING NOTES
Color: Deep mahogany.
Nose: Its age is apparent on the nose with dusty oak scents at the front followed by cherry cobbler, pecan praline, and spearmint.
Palate: The mouthfeel is full, oily, and rich with flavors layered with dark fruit, bit-o-honey candy, and anise. It has a lush finish with cherry cordial, coffee cake, and honey-roasted nut flavors, along with a touch of menthol.
